This is one of my favorite times of the year. I LOVE Mexican food and cook it at least once a week or eat out. The Denver area has great Mexican restaurants. Santiago’s is my very favorite and El Tepehuan comes in a very close second.
Today is also planting day in the garden. We will get more snow but the plants can be covered and usually suffer no major damage. It would be nice to live in a climate where snow and freezes aren’t a problem, but I would definitely miss the Denver area AND the mountains! I can drive for 30 minutes and be in the lower mountains where the air is clean and the rivers and streams are full of fish.
